“Extrait”
Grade 1 – Signature Matcha
The Essence of Matcha
Signature Matcha & Tea Collection
The purest and most concentrated expression of matcha at Ginza Fuka.
MATCHA 01 – EXTRAIT is our flagship matcha, created to reveal the remarkable depth, complexity, and intensity that can exist within a single bowl.
Rather than defining Extrait by one fixed origin, we carefully select exceptional matcha according to each season and harvest, choosing teas for their depth, aroma, umami, and refined bitterness. The composition may evolve, but its purpose remains unchanged: to express matcha in its most complete and concentrated form.
The name Extrait, meaning “extract” or “essence,” reflects this philosophy.
Rich umami emerges first, followed by deep vegetal notes, restrained sweetness, and an elegant bitterness that gives the tea its structure. As these elements unfold, the character of the matcha becomes increasingly complex, leaving a long and distinctive finish.
Prepared traditionally with water, Extrait reveals its clarity and precision. At higher concentrations, its remarkable density and depth become even more pronounced.
This is matcha without distraction.
An exploration of depth, bitterness, sweetness, and umami, distilled to their essence.
